Breakfast Muffins

Almonds are a great way to boost your child’s Calcium intake plus they also contain vitamin E, magnesium, folate and healthy fats. This easy muffin recipe utilises ground almonds, which you can either buy or grind yourself from whole nuts.

Ingredients

50g ground almonds
50g oats
½ tsp cinnamon
1 tsp baking powder
2 tbsp ground linseeds/flaxseeds
1 ripe banana
1 medium apple grated
2 eggs beaten
Handful raisins or other chopped dried fruitPreheat oven to 180 fan and line a muffin tray with 6 muffin cups or grease with coconut oil

  1. Mix the ground almonds, oats, linseeds, cinnamon and baking powder in a bowl

  2. Mash the banana and add it, along with the grated apple to the dry ingredients. Tip in the beaten eggs and mix until combined. Finally add the raisins and give it a final stir

  3. Divide the mixture between the muffin cups and bake for 15-20 minutes

  4. These are great served for breakfast, especially on busy school/nursery mornings and they also make a great lunchbox snack
